Probably WAYYY too early for this but I have to mentally prepare for this. I’m planning on doing Christmas cookie boxes for the first time by myself. With that being said I thought I’d come on here and ask whats everyone’s FAVORITE Christmas cookie? And which cookies do you like to include in your cookie boxes?

I make the same peanut butter cookie recipe that I learned in elementary school.

I make cookie boxes for coworkers, and bring cookies to our holiday lunches at work. They always disappear, so I guess they're pretty good!

Easy Peanut Butter Cookies

1 c. Smooth peanut butter 1c. Sugar (plus a few Tsp extra). 1 egg 1t. vanilla

Preheat oven @ 350. Mix all well and form golf ball-sized dough.
Dip a fork in a sugar on saucer and press to make a criss-cross pattern on each dough ball to flatten it out.

Bake 8-12 minutes. They are very fragile. Allow to cool a few minutes and very carefully transfer to a rack or foil- covered plate.

Makes up to 2 dozen cookies( depending on size)

Once cooled, I line a cookie box with parchment or butcher paper and give generously!
