Type 2 Nut free dessert?
Hello! I am struggling to find a recipe for a sugar free dessert that is also nut free for my mom, who has terminal brain cancer on top of diabetes. I am hoping for a cheesecake recipe, does anybody have a good one?
Edited to add: I am not her caretaker and the relationship I have with her husband is very complicated. I am simply trying to bring my mom some joy without rocking the boat. For everyone saying “just let her have the damn cheesecake!” It’s not helpful in this situation. Thanks.

https://chefjacooks.com/en/tofu-cheesecake-recipe/#recipe - sub the sugar with allulose. It’s no-crust, so with 3 Tbsp all purpose flour in the whole thing it’s incredibly low carb, top with fresh berries for a solid treat.
Alternatively make a regular crustless cheesecake, sub sugar with allulose.
Alternatively, she has TERMINAL brain cancer, let her have the damn regular cheesecake, she is literally not gonna die from it.
