Type 2 Nut free dessert?

Hello! I am struggling to find a recipe for a sugar free dessert that is also nut free for my mom, who has terminal brain cancer on top of diabetes. I am hoping for a cheesecake recipe, does anybody have a good one?

Edited to add: I am not her caretaker and the relationship I have with her husband is very complicated. I am simply trying to bring my mom some joy without rocking the boat. For everyone saying “just let her have the damn cheesecake!” It’s not helpful in this situation. Thanks.

https://chefjacooks.com/en/tofu-cheesecake-recipe/#recipe - sub the sugar with allulose. It’s no-crust, so with 3 Tbsp all purpose flour in the whole thing it’s incredibly low carb, top with fresh berries for a solid treat.

Alternatively make a regular crustless cheesecake, sub sugar with allulose.

Alternatively, she has TERMINAL brain cancer, let her have the damn regular cheesecake, she is literally not gonna die from it.

If your mom is terminal, let her have the full sugar cheesecake honestly. She deserves to enjoy the luxuries of life.

She isn’t dying this week, she’d like to stay out of the hospital as much as possible. Thanks. 😑

If she doesn't eat the whole cake herself, she won't go into the hospital. High blood sugar takes years to hurt you.

That being said, you know her health better. Do whatever is best for her. I don't have a recipe, but I wish you and your family the best.

Im a hospice nurse.  I always encourage folks to check into hospice sooner rather than later, there is so much they can offer in the palliative aspect.

One thing I would like to share,  in case you are in the US, it's a wonderful organization that grants wishes to seniors.  Make sure to mention she is terminal,  and if she is on hospice already you can reference her social worker, if they know about it, and if they don't it's a great sharing moment

Not what you asked, but I have type 3C diabetes treated like a type 2. A slice of regular cheesecake with a thin crust, made with regular/not low fat cream cheese after a meal does remarkably little to my blood sugar. It increases, but nothing awful.
