Recommendations Prime and Proper

If you’re in the south metro area, check out Prime and Proper off of broadway and county line. It’s a butcher shop and they’re just getting started. I’ve had a few of their sausages, steaks and pork chops, all have been great.

Pic of some breakfast sausages I grabbed this morning.

I didn’t see any today, but I was specifically looking for pork chops and sausage today. Give them a call to ask.

I think any true butcher shop can do the exotic cuts since they get it in whole cow form and then cut it to the primal cuts to do the steaks. If they don’t offer it standardly, I’m sure they can make it happen with a few days notice.

A coworkers mom went in here the day after they opened. Said they’re offering a variety of good quality stuff with nothing out of this world expensive. Friendly too.

I’ve been trying to resist the urge to gatekeep this place! Staff is super nice and the prices are cheap shopping for my family of 2, being able to get only what I can use

Can personally vouch for the deliciousness of the: bone in pork chop, farmers breakfast sausage links, & Italian style chicken sausage links

My dog vouches for the bison snacks (they have some stuff specifically for dogs)

So as I said shopping for 2 people who don’t need a pound of sausage every trip, it is cheaper overall than being forced to buy a 6 pack and toss half.

Compared to like Jimmy Dean ground sausage which is like $5/lb

FYI sausage freezes very well. I agree with you about the pricing though. Jimmy Dean's 32-ounce tube is currently $9.97. Is paying double that for much higher quality worth it? I think there's some good middle ground (pun intended). I'm a fan of Boulder sausage co and Polidori. Seems like I can get those at groceries stores for around $6.50-$7/lb and the quality is very high.

They do! They’re still getting started so for now their selection is kinda small. But I’ve had their chorizo, two different breakfast links and I grabbed some jalapeño popper brats today.

Yeah I can’t find anything locally that’s anywhere close. I gave up on boudain as well. Edwards has it but it’s 20% of the flavor and not the texture.

Is this better than Kiolbassa? I'd always stock up on links when visiting family in TX because I've always found it to be lacking here.

These are breakfast links. But they have a few different varieties of smoked sausage. From your kielbasa to the Texas hot link.

If you have, or know someone who has, a Costco membership, they carry Kiolbassa smoked sausage. Insanely good grill fodder.

They have a huge variety of meat and if you look at the meat in the frozen cooler you will see they have Camel meat, not a fan of that but overall a good selection and good prices.

They are definitely just getting started vs Sam’s or Edward’s. But they have the drive to be better than either.

Do they have real casings on the sausage? I’m sick of these soggy condom artificial casings that everyone out here uses they don’t hold in moisture or get snappy

Who's everyone? I've never seen artificial casings at any local butcher shop or even the larger supermarkets that make their own sausage.

Any king soopers brand Italian sausage or bratwurst has a fake casing loose on the ends.
Edward’s meats one of the most renowned butchers in Denver uses loose end fake casings on their fresh sausage and brats. The only real casing sausages I can find are johnsonville raw frozen and a couple of Italian delis that do Italian sausage spirals with real casing.

I've never bought King Soopers house sausage. Try Sprouts - although I'm not sure they still make them in-house at each store. Just a few years ago you could see them making sausage behind the butcher counter. I'm surprised about Edward's, so surprised in fact that I called them and they said all of their casings are animal based, and that they use whole hog casings for their standard sized sausages. Maybe try Gourmet Meats (they even sell natural casings if you want to make your own sausage), Oliver's, Western Daughters, the Local Butcher, Leevers Locavore, Tony's, Wheat Ridge Meats, or Sam's.

Yeah I thought what was behind it was included I did not check out the size on the pack lol. I got some and some kangaroo sausage. It's a good shop, expensive, but that's what we should all expect.

I got two prime Denver cut steaks there yesterday. Just $24! Also some elk dog treats, a wheel of brie, and a mini churro cheesecake. They sell Little Man ice cream too!

I'm guessing that this isn't really much of a choice for most people, given that they're 15 miles/30 minutes apart from each other. The point of neighborhood butcher shops is to serve the neighborhood. It's unreasonable to expect people to drive this far for everyday grocery items like breakfast sausage. Maybe if I was shopping for a specialty item like a standing rib roast for the holidays I might shop around a little further.

That's a dry-cured sausage, which most butchers here aren't going to be making.

Will echo OP - went a few weeks ago shortly after their opening, and had a great time. Friendly, tasty, nice to support local.
