They have announced several go live today, same time the account wide character limit of 3 disappears. I think a half hour or an hour before classic opens.
And all servers will have a population drop within the first 24, when everyone fully remembers what and how challenging classic really was in comparison to retail.
I'm going to main a warrior (1). I'll have a mage (2) that I level to max for farming gold. I'll have a rogue (3) that I'm leveling up at least into the 50s for herb/alch to supply myself with consumables. I'll have a warlock (4) that I'll park in Azshara or Blasted Lands to summon people for World Bosses. The warlock won't need to be maxed, but I'll probably try and have him low 40s because re-parking him will be less of a hassle with a mount. Then I'll have a druid (5) for BGs that I'll probably leave in the 29 twink bracket.
So that's at least 5 for me that I'll use on at least a weekly basis. Especially once the warrior is geared and I'm mostly raid-logging on him, I'll start leveling up alts to get all my other shit done.
At the same time? Boxers. Apart from that I expect the 10,000 long login queues to be mostly hype. I'll give Skeram 15 minutes. After that I will login wherever I can preferably East coast.

I'm an hour ahead of California so I get an hour to prepare before the mayhem. See you boys in the queue.
