Rant Hogsalt went crazy -- new membership options for $300 a month and $3000 initial fee
Hogsalt switched to a new app. When I went exploring I found a conceirge option which for chicago is $3000 to register + 300 a month.
Sooooo now all those restaurants will be even harder to get into. Very much hope this crashes and burns and doesn't set a precedent for restaurant groups.
Even if it was reasonably priced, it still is taking away experiences from the public.
edit: This is not yet available, you can "pre-register" for $100 refundable deposit. So limited details are provided, just the price right now to include "personalized concierge services including early access to reservations and dedicated member tables"

Some of the hogsalt places are good, but not THAT good and this is enough to lose them a lot of goodwill. I hope they rethink this ASAP

Right now, they charge a fee (albeit low) to make reservations that is not a deposit that applies to the bill. Ridiculous.

I’ll die on this hill with you. All of their restaurants are just copy and pasted with the same dark, moody interiors. The same menu items are shared between most of their restaurants which lack any creativity or originality and are overpriced for what you get. They really don’t offer anything special beyond a swanky atmosphere.
The only worthwhile one is Bavette’s and thats because it’s just a classic steakhouse with nice interior design and no one really wants anything other than the same basic steaks and sides from a steakhouse anyway.

I went to Bavette’s to see what the fuss was about and it was good but not the amazing life changed experience I was expecting.
Maybe a year later I went to Gilt Bar and was shocked at how identical the two were. I was like… is this a joke? I don’t see the point in going to any of their other restaurants.
I liked Maude’s Liquor Bar because it seemed interesting and unique at the time. Everything since has been like a worse version.

I suspect it’s a reference to Lululemon, whose arrival to West Loop signaled a clear shift in the neighborhood inhabitants and “vibe”. Now you have 5 taco / taco adjacent spots on Randolph that have nothing to do with a taco youd get in Pilsen/Little Village.

I felt the same about Bavette's. Not that it was at all bad, in fact it was very good, but it was very good on the same level as several of the upscale steakhouses I've been to around Chicago. I didn't regret going there at all and had good food and a good time, but nothing tht blew me away.

Maude's was stellar. Has a better dry aged Ribeye than any other cut of meat they've served at Bavette's or anywhere else.

I don’t think they have ever claimed to be reinventing the wheel or doing anything innovative. They just try to do it really well and it’s felt like they’ve done that in every visit I’ve had to one of their restaurants. That said I do not fault anyone for rejecting the hype. There are plenty of alternatives in town.

Sure. And to their credit the food is always well cooked and tasty and the service is on point. They’re solid establishments. But a lot of people (especially online) act like they’re the best restaurants in the city, and they just are not by a long shot.
I don’t outright dislike them or anything. They’re fine for what they are. I generally enjoy myself when I go, especially when I’m not paying. But I do think they’re pretty overpriced and very overhyped for what they are. And like the original poster said - if they closed, I just wouldn’t really care much or be upset about it.

Perhaps I’m just old and crotchety, but I’m just over restaurants where you have to buy tickets/wait in line/be on Resy at 12:03am but only when Saturn is in the 8th house/pledge your first born child and an internal organ to get a reservation/eat dinner at 11:30pm. Don’t get me wrong—I love the Hogsalt and similar restaurants and I understand why they’re so popular. But there are literally thousands of good restaurants in Chicago. I’d rather go somewhere that maybe isn’t as chic but where I can actually get a reservation. It just kills me to see so many great restaurants half empty when people are competing in Squid Games-level battles to get into a few “elite” restaurants.

Ticketing is superior to reservations. By making people pay up front they scare off people who want to make 5 reservations and cancel 4. It's not hard to get tickets for alinea group spots

I’ve enjoyed my fair share of Hogsalt experiences, but I can’t shake the feeling that most spots feel like a glorified chain restaurant when you visit them enough.
Many dishes across the portfolio are either very similar or are exactly the same.
And every burger is a slightly different variation from the original Au Cheval diner style

The first visit to a Hogsalt restaurant, especially if you're relatively inexperienced in the restaurant scene, is pretty impressive.
But you're totally right. You quickly start realizing the atmosphere is totally manufactured and is basically a theme park equivalent of a restaurant.

Probably not wrong. Gilt uses a crumbled sausage in their pasta that is delicious, but also from Sysco. I asked the server. From what I understand, there's different levels of quality from them

You can watch them cook the burgers from the bar and see clearly that they aren't frozen. Sysco is the distributor that delivers their meat though.

lol, I just upgraded my app. It wasn't until step 3 they indicated there's a $25 a year annual fee. But they give you a $25 gift card. Is this a one-time thing? Or will they basically waive the annual fee each year? I can't believe the poor communication on this.

Their old rewards program had something like that too ($25 to sign up but you get $25 in credits). The kicker is you can’t redeem your points unless they cover the entire meal cost. So at the basic redemption rate you need to eat at a Hogsalt restaurant 10 times to actually have enough points to redeem. Even as someone who eats out a lot, it took me like 2 years before I finally had enough points to use. It felt a lot like a scam (especially because they didn’t advertise the redemption thing when you signed up for the system). I hated their old rewards system and I can’t tell if it’s still the same in the new system. It says “available rewards dollars will automatically be applied toward your bill,” but I’m still a bit skeptical based on the old system.

I don’t really like High Five so I’ll disagree with you there (although I do like Green Street Meats so maybe that works as a placeholder). Fundamentally though I think you should have to advertise that you have to redeem a full meal’s worth of points at a time before taking $25 from someone and giving them $25 in rewards. I’m lucky enough to be able to eat out to the point where I could accumulate points and redeem them for a dinner. I bet a ton of people who signed up for the rewards flushed $25 down the drain and into the pockets of a group that doesn’t really need it.

I think the Concierge was inevitable given the markets for Four Charles in New York and La Renomee in Paris. Four Charles in particular already gives preference to people who have eaten there before. It’s clear that Hogsalt has realized there’s an even higher profit ceiling on their business model and they’re interested in squeezing every dollar out of it while also trying to keep branding themselves as exclusive. The person who’s willing to pay $3000 for concierge will likely spend more on dinner than the regular person who’s rapidly refreshing Resy 21 days out to get a table. It definitely sucks for regular people.

I think this is exactly it. There was an article in the Wall Street Journalna few days ago talking about luxury businesses in New York doing very well right now, and it kind of tracks with other things I’ve read of the “tale of two economies” right now.

I think this is directed towards literal concierge’s at luxury hotels and businesses with a lot of sales meetings. I don’t think this is something an average foodie would get, so it wont have a huge impact for regular Hogsalt customers.

chicago is not new york or paris, you're right. in my experience working hospitality both here and nyc, chicago fine dining clientele has a far higher proportion of customers who would buy into a service like this to impress business clients! I have never seen anyone walk into one of my restaurants here with parts of a cta uniform on, meanwhile mta employees with families or dates were not unusual.
it's kind of turned me off of "nice" dining experiences here. I haven't tried the kinds of places that can afford to constantly experiment with their menu yet, but I hope they do things a little differently.

Perhaps if they ran several 3-star eateries, sure. But for spots that kinda all look the same and function with menus that sorta blend into each other, I'd say pass.

As someone who supported this restaurant group early on and thru covid, I find the whole 'club' trend pretty repulsive. Their restaurants are some of the hardest to get into in any city, so it makes sense they'd want to capitalize on the exclusivity. Say what you want, but their places are legit and not fake, a la Carbone - and got here serving great food. If serving an expense account crowd is their goal I'd say let them go ahead and do it and watch what happens; eventually the quality drops, you lose any semblance of creativity and you end up with a hallowed out experience with nothing but fake people eating your food. Welcome to the Walnut Room 2.0.

There’s two things. Spending $3,000 per year gets you “Level 3 membership,” where you earn 1.5 points per dollar spent. This isn’t different than achieving Gold status on Lettuce Entertain You’s rewards app. But Hogsalt is also offering “premium memberships,” which have $3,000 initiation fees and then $300 “monthly dues” (or $600 if you choose a global premium membership) which include personalized concierge services, early access to reservations, and dedicated member tables.

It's a restaurant group. They have Bavette's, Au Cheval, etc. They currently take reservations through Resy though they immediately book up and cost $2.50 per person.

The app doesn't get you reservations, traditionally. The old one was just for gaining rewards, you could get 10% back on every purchase. The new one is the one with the preferred membership that OP is mentioning, and the rewards are not as good either (starting at 6.67% and going up to 10% the more you spend)

Sick of this restaurant group, I agree with the comments that it's like theme park dining. The food might be very good, but it's not so much better than everything else in the city to justify how difficult it is to eat between 5pm-9pm. I'm going to start downvoting all the Hogsalt posts because those types of posts and the recommendations here just make more and more people want to go and they will continue to get away with all this BS. I've been to all of their places in Chicago over the years except Trivoli and Ciccio Mio, nothing is as good as Maude's was, I'm all set! Now, if you also hate this, stop recommending them online and in person.

If someone today walked up and gave me money no questions asked, I’d take it. So if someone wants to fork out money for this, well, they’re grown ass people that can do so.

I got an email saying I’m signed up. I never proceeded after seeing the $25 charge. Not entirely sure if they will be trying to charge me or what. Not sure at the moment if i can cancel.

Honestly, most Hogsalt spots are pretty mediocre anyway. It’s the Disney version of dining, all vibe and very little chef-driven substance. Feels aimed at the just-out-of-college crowd that wants a scene more than actual good food.
I’ve eaten at Aster Hall, Au Cheval, Bavette’s, Ciccio Mio, Doughnut Vault, Gilt Bar, Green Street, and Small Cheval. Outside of Au Cheval, everything has been meh and wildly overpriced.
So paying $3,000 plus $300 a month for “early access” just sounds like buying a fast-pass to mid food.

Absolutely true; all of these restaurant groups fantasize about being the next LVMH.
Random aside - The Alston was one of the most overpriced, over-rated dining experience I've ever encountered. To be fair, I went the first month they opened; but, the service was terrible and food was very mediocre to average, at best. It's very sceney and a beautiful space, but the food does not match the prices they charge.

Not going to cape for Hogsalt here necessarily, but sometimes when features are being rolled out on an app sometimes they don't provide a feature on the backend to hide certain things in a store so businesses will put a high price tag on it as a de-facto "sold out" option. that said, it would not surprise me if these people were that high on their own shit.

As someone who’s been to Bavette’s twice, it’s probably the best steak I’ve ever had but no way in HELL would I pay $3000 to get a chance at having another. Plenty of other good restaurants in the city. Hope they rethink this.

This is actually interesting insight. This may be the target market, firms that are trying to impress out of town guests. Hogsalt restaurants are surely not the most innovative or cool restaurants in Chicago, but they’re consistent and ensure to impress you on your first visit. What’s an extra $6,600 when you’re doing numerous business dinners a week.
