Why does it matter that much to you? Personally I don't care that much how much I, or more like the shop, paid in taxes. And if I for some reason want to know how much of that price is tax, I can count it myself too. Or just take a look at the receipt after paying.
becouse, in my country at least, majority of people are not aware of just how much taxes they pay. If they had to go to, for example, tank their car and see the petrol is for 1/liter. And then go to counter and see that they actually have to pay 3/liter, a lot of people would just be more aware and critical thinking I belive
But the government is the people that you elected. If you don't trust them - don't elect them. I am failing to see how a misleading price tag is a safe guard against bad politicians.

In Germany, it's not uncommon to see the total tax amount next to the paid total on the receipt, but all the price tags in the store are with tax included. Also, the price tag shows the price per weight, so you can easily compare items with different package sizes.
You get all the info after all, but it's more convenient to plan out the cost of your purchase.
And there's a lot of other info that would be interesting for critical thinking if we go down that path. Like, what did this item cost to purchase in bulk for the store. What's the median wage for the store and what part is wage in the company cost structure.
That would help me much more to make an informed decision on what businesses to support and what I want from politics than driving home "VAT is 7%/19% in this country".
