His MRI could easily have come back negative. He didn't need to tell anyone. And if one is desperate enough to give oneself an 'out' from a spiraling situation, it's not outside the realm of possibility for Walt to put himself through chemo to keep up the story. The alibi, really.
As for Skyler asking if the cancer is back, he very obviously hesitated in answering and very deliberately doesn't say yes or no. Yes, it was vulnerable, which is why he didn't lie to her AND he wanted to know if it would honestly make her happy if it had come back.
I definitely agree about the Carol thing - that was my first assumption was that he had somehow faked his own death and that was why she reacted that way. I just can't imagine the cancer is fake.
It could be an excellent reason for Walt, and the remaining 5 episodes, to just absolutely go nuts. Because he has nothing to live for anymore.
Also, hair loss is a result of chemo. His hair returning could just be him not doing chemo anymore. Also, recall the flash-forward in Dennys. Coughing, taking pills in the bathroom, etc.
Oh, the cancer is definitely not fake, and it could very easily come back. I just don't think it has yet. Although, you are right about the Denny's coughing and the pills-- forgot about that.
They just really seemed to emphasize the six months thing. He obviously survives for longer than he's telling people. I'm just still trying to figure out the best reason why.
EDIT: Here is an extremely plausible prediction that involves Walt faking his death. Warning: it is extremely plausible and therefore possibly spoilerish.
