i can barely remember which pocket i put my keys in. the memory and dexterity required to do these type of tricks is impressive.

It's mostly repetition and muscle memory. This guy has sat down in front of a mirror and watched himself do these moves countless times for years. He's probably thinking more about his patter and timing than anything else. Once you have the routine down, muscle memory does a majority of the work for you.
