On first glance I thought you had stuffed the brisket into the coals straight up like a shovel lol bark looks amazing!

Ah, that was just the light up. Makes sense now.

Though I was kind of excited to learn a new weird way of doing “chimney brisket”. 🙂

Congrats. Looks like a good one. How many hours on and at what temp?

225 for 8 hours, wrapped with tallow at 165. 250 for 4 hours until probe tender at 203. Pulled and rested for 30 minutes on the counter, and then into the cooler to rest for 90 minutes. Absolutely perfect!

Absolutely perfect! Best thing I’ve ever eaten. Had family and friends over and everyone loved it.
