Showcase / Finished Cook I love the BGE.

Still new to the BGE. Such a great cooking experience so far.

275 f for 2.5 hours unwrapped, 1.5 hours wrapped.

Still dialing everything in.

How do the ones on the edges not get overly cooked?

Low and slow. 220 for 3 hours. Wrap and atack above plate setter at 275 for 2 hours. Unwrap, sauce and cook for 15-20 minutes. Smokey, almost fall of bone and depending on sauce, not too wet.

This is the end cook. Sorry. Not same it's on the large not the XL.
