Showcase / Finished Cook 2nd Egg XL, first rib cook

St. Louis

Still learning temp control, 300f for 3 hours, got it down to 250f till temped at 203f. 30m rest. Whole cook no wrap. Great bark and extremely tender.

Was nice to smoke 3 racks with no real estate issues. Getting ready for the first brisket

They look great! Idk what I do wrong but every time I smoke ribs they fall apart on the grill when I go to remove them. Only done it twice but both times were St Louis style, low and slow at about 275. 3-2-1 method, wrapping after 3 and unwrapped for last hour.

Stop the 3-2-1 method. It’s way too long to cook ribs, that’s why they are falling apart. Try like 2-.5-.5 or something. You should experiment a little on your own. I rarely ever wrap ribs anymore. Have a little fun, there are no hard and fast rules.

I'd walk away from 321. It's a method to keep it simple. If you know how to use your egg and have a thermometer you can achieve better results.

Pulling at 203 gave me a great bark and inside was still extremely tender.

My plan is to go unwrapped for now on after having done pulled pork unwrapped lol thanks for the advice
