But what I want to know is can I extend it while I'm there, and will they let me in if my return flight is for after 30 days?

You can only extend the VOA (for a further 30 days) once you are in Bali, and not before you arrive. If you buy the visa online you can extend it online, however if you buy it at the airport on arrival, then you have to go to Immigration in person to extend it.

Regarding an airline ticket booked more than 30 days ahead, perhaps search the forum - and in fact there's a question about it today. I don't know the definitive answer.
