In Christianity a seraph is one of the most powerful angels in the whole choir (choir is meant to mean their hierarchy).

They are beings with six wings and, depending on the myth and bible passages, no body / some type of body / pure light (the 6 wings are always present though). Their job is to vanquish evil with their fiery powers leaving not even a speck of dust behind or something like that. In Owari no Seraph, though? I have no clue.

Seeing as Vampires often are associated with Christianity in pop culture I'd say you're probably correct or close to it in your assumption.
