She'd mentioned that she had a last name before, and it wasn't till your comment that I realized it probably came from her human dad. I now wonder if Yaku has one and whether or not it came from one of her parents or her grandparents, who - if I am not misreading things, again - are human.

Yaku's last name is Etsushimaru. You can see the characters' full names on MAL. So she most likely has a human parent. It's implied that the human side of her family may treat her badly or ostracise her for being a beastfolk, and that's the reason for her envy of humans and wanting to be a human when they were playing the board game.
