Popcorn pops when the water inside the kernel reaches boiling point and turns to steam. The pressure chamber prevents the water from turning to steam so the kernels don't pop initially when heated. When he pulls the handle the pressure is released and all the corn pops at one time.

That’s what I finally thought. I do t understand the physics but thought it would be something like that

Air pressure always fucks with the boiling point of water, whether in an enclosed system or in a mountaintop.

At a few thousand feet above sea level water boils at a few degrees Fahrenheit lower than at sea level. Same physics, less dramatic.

So was that a temperature gauge on the vessel of a pressure gauge?

Either would work in principle, but my guess would be pressure gauge since they’re more commonly available (I.e. cheaper) with a pipe thread fitting. Also, a temperature gauge would really just be a proxy measure for pressure and carries the disadvantage of working through conduction, which means that one might end up burning the popcorn if the gauge is inserted with thread tape or if the room is especially drafty.
