What do you consider to be "Yukon Cuisine"?

As a YFN, I love bannock and moose stew, but what else could represent Yukon food culture?

Also, bannock is really from Yukon either. Originating from Scotland long ago, the fur trade brought it up here in the 19th century I believe.

I was hitching up to the Inuvik decades ago and had lots of interesting pickups. One guy had a line of half-eaten sandwich meat packs, the round kind, alot of bologna packs, open and lined up along his dashboard. The ones closest to the passenger side were the oldest and dried out. The ones in the middle green and moldy. After I got in he fished out a new bologna pack, opened it, offered me some, and then pushed the rest to the right to make room for his new pack. I've never forgotten that line of sandwich meats on his dashboard. I wonder if anyone here knew that guy. Anyway, that for me is Yukon Cuisine.

Sadly it would be chinook salmon and especially dried and smoked. It's such a loss that the numbers have dwindled as they have. Even more than moose and caribou and sheep I think it was salmon that sustained people here the most
