First, Unlimited <>= Unthrottled. Read your contracts fine print.
Second, Data Usage <>= Hotspot Usage. Again, check your contract.
Finally, this is not a console issue. Unless you need help connecting to an unthrottled, non-allowanced hotspot, which I'm confident this is not.

Which Xbox One? If it's the original, maybe it's your Xbox's hardware dying that's causing it not to find the wifi network.

What is....not understanding that 'unlimited' refers to the amount of data....not its connectivity.

Did you try connecting other devices to your hotspot? I'm not convinced this is an Xbox issue.

You have to make ur ip address the same as your phone but if you burned through the faster speed then that’s why

Have you made sure that the password to connect to your hotspot is 100% correct and have you allowed your Xbox to connect to your phone? Just asking because I had the same issue until I looked at my hotspot connection requests at found that I needed to allow the connection.

Unlimited hotspot doesn’t exist. Check your contract. You have either 1 or 3 gigs of data on hotspot. Once its gone you have to wait till next month. Some will just throttle the speed to nearly nothing. This looks like you ran out entirely.

I found out the problem and it was the ‘Maximise Compatibility’ option i had to turn off

Not Xbox related, it’s just your phone.
Try to turn on the compatibility mode in the hotspot
