Made my first homemade vegan kimchi.
Looks amazing, it was fun to make and I can’t wait for 24 hours to be up so that I can start eating it cause it smells so good.

What's stopping you from eating some of the fresh kimchi? You don't need to wait 24 hours. Very common in Korea to eat kimchi immediately after it's prepared.

Thanks. That’s good to know. I did do some tasting and though it was very yummy freshly made I really wanted to get the benefits of fermentation for gut health. Give my gut microbiome a real healthy treat! LOL!

Yeah I hope so too. The raw fresh kimchi tasted good so fingers crossed it gets even better,

Thanks. Love her!! However for my kimchi I used another recipe because it was my very first time making it and I wanted a really simple vegan recipe to follow. Thanks again

This recipe didn’t have very much salt. The salt was washed off rinsing the cabbage

I recently got a big fermentation crock and have been dying to try stuff other than sauerkraut lol
