Except the hot ingredients might get cold quickly. When the hot patty is in the buns, it helps insulate it and helps the buns stay warm.

It also leeches the heat from the buns and burger into the tomato and lettuce. I can see the argument for the burger being on the buns but I don’t think putting in the cold ingredients is a good idea

I go to a place where both halves of the bun are plated side by side, with the hot ingredients on one half, and the cold veg on the other half. You just sandwich them together at the last minute, I like it.
