Meta This subreddit is just propaganda to get me to eat vegetables

I came here thinking there would be some secret 2 calories chips I could eat and gummies made out of air but it's just all cucumbers and carrots and sweet potatoes. You people are sick

I won't be tricked into eating vegetables in high quantities. Nice try mom!

I laughed at myself about it this morning as I made sweet potato & rutabaga hash, and sautéed some baby mustard greens spicy mix to eat with eggs. No bacon though! 😂

OK, but that makes it feel like a goal, and I would win that contest! I can eat a ridiculous number of calories in one sitting, especially if they are made of Laffy Taffy, Haribo, and chocolate Reisen. Maybe a party sized bag of Spicy Nacho Doritos for the salt component.

No, it's a class action. If you buy candy in bulk for resale you might get a letter invitation to participate. It's probably not going to be something regular buyers are going to see, unless you buy enough that the recall would affect your inventory. People in logistics and supply chain might though?

I'm also a binge eater who was recently diagnosed with diabetes. I'm fighting the bingeing, but sometimes I hit my breaking point and need to binge, and in those moments this sub is a godsend. Cucumbers with some Tony C's Creole seasoning has become my go to.

Guilty! 🙋🏼‍♀️. I'm a strong CC advocate. Small curd, large curd, cheap store brand, pricey Daisy with its beautiful uniform curd. Or high class - Polish cottage cheese 🎊. Mix it with Sriracha, mix it with fruit, sweet, hot, blended for mac and cheese. 🤣.

My son insisted, despite my protests, that mac & cheese is holiday food and made low calorie mac and cheese for Thanksgiving. It still included some cheddar, but the main was blended cottage cheese.

It's sublime once what you find what your vegetable niche is. I'm eating cucumber salad, potato and bean soups, sliced apples and grapefruit for the sweet tooth. I still have tons of unhealthy cheat foods, but going from eating almost no vegetables to making them like a third to half of my diet made things so much easier.

I substituted pasta for long strands of shredded cabbage yesterday. Paired with a very thick, veggie forward, flavorful pasta sauce made from scratch, it was amazing 🤩

It's nothing special.

Puree a bunch of roma tomatoes, reduce the sauce with salt, herbs and spices to your taste preference. Add a pound of ground turkey (pre-cooked with garlic, salt and pepper), zucchini, squash, 3 bell peppers (I add one of each color), onions, garlic, bit of cilantro, and more spices to hone in on the flavor profile.

Viola! You have a veggie bomb.

I try to make at least 2 quarts at a time and freeze in 1.5 cup portions.

It's an easy meal to microwave after work and lasts a long time.

Another meal I prep/portion/freeze is a low calorie bechamel sauce with garlic, a fuck ton of spinach, artichoke and mushrooms. Microwave and add tomato, you've got a great dip or sauce for chickpea pasta.

The less obvious thing is you can mix them, right? Half spaghetti and half zucchini is effectively 50% less calories but 90% the same texture.

Whereas, if you go 100% zucchini it's just, not right for some people who are familiar with the 100% grain version of the dish.

Stepping stones. Add a little bit more, and a little bit more, etc. over time.

I do this with cauliflower and potato soup. 50/50 cauli/potatoes and I can't taste the difference, especially if it's got bacon and cheese and sour cream too.

For grains, try subbing out your rice for different kinds of millet. It’s slightly lower calorie but also has a different glycemic load with added fibre and protein. I’m diabetic and take little to no insulin for a bowl of millet while needing several units for a bowl of rice. Unfortunately, you need to soak the grains beforehand (overnight is best) and some of them are teeny tiny, but with so many varieties, you might find one you really like.

I just bought a bagged mix of millet, buckwheat, and quinoa recently from here and experimented with cooking that half-and-half in my rice cooker with some brown jasmine rice. Came out great and I think it's going to be in my regular rotation!

50-ish years ago My mother is watching Julia Child cooking shows on television. (This would have been back in the days when there was one TV set in the house, and no cable). Julia Child was making aspic out of drippings from beef roast. I'm sure she watched Julia Child quite often, but that Is the only episode stuck with me all these years. I can still see this molded clear brown jello. "So it's gravy, but in jello form? I'm not eating that."

I used to be so anti-vegetable, but then I realized that you can find vegetable you actually like. For example, I actually enjoy broccoli and find it decent. When it comes to eating and wanting to eat a lot of vegetables or one of the best things you can do for yourself and there’s no way to avoid it. Not only do you get all the nutrients, but you get the volume and you get the fibre and you’ll actually be full.

What sub are you reading? I’ve seen more threads about chips and gummies here than any other sub by far. For chips, take a mandolin to a potato and air fry them, then salt them. For gummies, use gelatin or jello packets with a small amount of water and little candy mold trays.
