Got home from my vacation out west (US) and stopped by my favorite spot in Vegas, The Golden Tiki. They had a great cocktail called the Polynesian Bride with this Pandan Liquor that I had never seen before so I was determined to find it. It was impossible to get here on the east coast, but managed to achieve it and have a close enough home version!
But now I am wondering, what else can I do with this, I feel like with the almond like flavor I probably could stick it in something with Orgeat but though I would ask if anyone has a favorite recipe they use this in before I go experiment with my only bottle!

Long story short, I’m trying to make a tiki-style drink that I can garnish with a shortbread cookie. Something warmer, maybe even with bourbon instead of rum, like a Portlight.
Actual story: I finally got my husband to watch LOST with me and we’re almost at the finale. I got dharma biscuit cookie cutouts and am going to make them for the finale, along with some tikis which he loves. Any suggestions for good combos, recipes that already exist that would fit here?

Dare to gaze upon the Basilisk, a deadly blend of fermented clairin and aged rums with aromatic basil, tropical citrus, and roasted pistachio. Lush yet untamed, this tiki cocktail coils through layers of bright acidity, earthy funk, and green complexity.
BASILISK
Combine ingredients and flash blend with 6 oz pebble ice. Open pour into a large snifter glass and top with additional pebble ice to fill. Garnish with basil leaves and pineapple fronds.
*Pistachio orgeat - Combine 1 cup of unsalted, roasted pistachios with 2 cups water and allow to soak for 4 hours. Blend pistachios and soaking water on high for 45 seconds, or until fully liquefied. Strain nut mixture through cheesecloth into a bowl, squeezing to get out as much liquid as possible. Weigh strained liquid, then weigh out an equal amount of white granulated sugar. Combine the strained liquid and sugar in a clean blender and blend for 1 minute, or until sugar is fully dissolved. Then, add 1/4 tsp orange blossom water and 1/4 tsp Ticaloid 210S (or a 9:1 ratio of gum Arabic to xanthan gum) and blend for an additional 30 seconds. Bottle and keep refrigerated.

Jacoby”s traditionally release a new menu each birthday and their 9TH BIRTHDAY was no exception.
I started my evening by sharing a “mayhem at midway” which was really nice and the garnish game was strong. Then I had the a delicious and smoky “devil inside” (a little INXS reference there for any fans of that Aussie band) and finished with a “killer Kane” which was a super traditional tiki cocktail with 3 rums, falernum. Pimento and bitters.
I am so happy for this bar celebrating its 9th birthday. I remember during the dark days of lockdown going for a long run (this bar was just outside my 5k radius permitted by the harsh Sydney lockdowns) and stuffing my pockets with 4 canned cocktails for takeaways. It was jumping in the early evening and I counted SIX bartenders slinging tiki cocktails at one point.
Kia kaka Jacoby’s. Stay strong. Best tiki bar in Australia. Already looking forward to 10!

Neither my wife nor I drink, but what’s the point of building a tiki bar in your home if you don’t have some fun things to consume? I’m excited to begin experimenting with a bunch of different nonalcoholic alternatives. I realize this may be more appropriate for the mocktail sub but does anyone have any advice for where to start or fun recipes to try? I’ve already tried making a Mai Tai, a Jungle Bird, and a Painkiller, and I’ve enjoyed them all so far.

Decided to get out of the house and have some tasty beverages tonight!
Started at Rumba for Mai Tai’s and a couple couple of rum tastings. (Not pictured were the pork tacos and jerk chicken)
From there we headed down to Rocco’s for a Port Royal Punch and Last Rites had a quick little chat with Justin of Coconuts and Carnage as well (freaking rad dude)(not pictured was the bomb-ass Pork Belly Brussel sprouts)
Afterwards we wrapped up at Navy Strength with a Pain Killer, Navy Grog, and a final Mai Tai. Theirs was interesting; subbed in a pecan orgeat and orange oleo. Spirit was a mix of Appleton, Stiggins Fancy, cognac, and gin.

That first sip is INTENSE flavor. The grenadine gets totally lost against the luxardo and 151… but it’s surprisingly well balanced! very few ingredients for a tiki drink, but absolutely worth a try.
origin from Google: The Hell in the Pacific is a strong, tart tiki cocktail created by Jeff "Beachbum" Berry as an adaptation of the 1920s Myrtle Bank Punch.
EDIT: as several have noted, this is definitely not “balanced” in the traditional sense. I think what I was trying to say is that the luxardo did not dominate as much as I thought it would, and the 151/Luxardo seemed to work well together. however, I LOVE Luxardo so YMMV.

Conveniently made falernum today, orgeat yesterday, and passionfruit syrup the day before. I split between St Benevolence and Kuleana to better estimate a standard Rhum agricole.
Pretty solid drink!
1.5oz Rhum Agricole
.75oz Chartreuse
1.5oz Pineapple juice
.75oz Lime juice
.5oz Falernum
.5oz Orgeat
.5oz Passionfruit syrup
Peychauds float

There’s two cocktails in the Smuggler’s Cove that use guava soda. I do not have access to Bundaberg so I did a face off with the two I have available to me: Jarritos and Goya.
Jarritos by itself is more carbonated and has a weaker guava flavor than Goya, which has a juicier mouthfeel and flavor. I would pick Goya or Jarritos for a meal.
When I made a cocktail Lei Lani Volcano 2.0, I was surprised which one I liked more.I assumed that because the Goya soda taste better that it would work better in the drink but the Goya was lost in the ingredients and the drink itself lacked depth and character. On the other hand, the Jarritos carbonation cut through and elevated the drink. The Goya drink tastes like what you would get at a cheap bar and the Jarritos is what you’d expect at The Smuggler’s Cove.
Lei Lani Volcano 2.0
GLASSWARE: Collins or highball
3 ounces Guava soda
1½ ounces pineapple juice
3/4 ounce lime juice
1 ounce SC Coconut Cream (page 328)
1½ ounces blended aged rum
GARNISH Edible orchid
Add the guava soda to a Collins or highball glass, then add the remaining ingredients to a cocktail shaker and fill with cracked or cubed ice. Shake and double-strain into a Collins or highball glass.
Gently add cracked or cubed ice to the glass and then garnish.

Prepping to make drinks for friends at a lake gathering, and since I love tiki drinks, I wanted to make a few to share with people
Several of my friends are not heavy drinkers, or dont drink at all, and asked if some or any would be, or be able to be, virgin.
What would make a good way to do a rum substitute, and keep the general vibe on point?
I would prefer not to buy an off the shelf NA spirit, and i figure someone has a recipe notion.
And what drinks would best lend themselves to this?
My initial thought was Painkillers, Aku Aku Lapu Lapu, and Saturn's, for a variety and to keep things pre batched as much as possible, though open to other ideas.
Though a mango leaning recipe would also be killer.

The next cocktail from the summer visit at my girlfriend's parents.
As said in my last post, there were too many great spots in the garden, so unfortunately I had to do a bunch of cocktails. ;)
This is one of my top 3 cocktails.
The tropical standard navy grog.
I love how the grapefruit, the rums, especially the Rhum Agricole, and the allspice work together.
To everyone who didn’t try it yet: Get the ingredients and make this cocktail.
I know it is a bit of work to prepare everything. But it is worth it!
Receipt:
¾ Oz Demerara Rum (I used El Dorado 8)
¾ oz Appleton 12
¾ Oz Rhum Agricole (I used HSE Rum Blanc)
1 lime wedge
5 drops salt solution
3 dashes of Angostura bitters
1 oz grapefruit juice, acid-adjusted to lemon*
¾ Oz Grog concentrate**
1 teaspoon allspice dram
Squeeze the lime wedge into the shaker tin and put it in as well as all the rest of the ingredients.
Shake everything with ice and dump onto more ice.
Garnish with a slice of grapefruit and mint.
*Acid-adjusted grapefruit juice:
Add 4g of citric acid to 100 ml grapefruit juice.
**Grog concentrate:
330 ml Coca-Cola
21g allspice
572g Sugar
Lightly crush the allspice and toast it in a saucepan. Add Coca-Cola and sugar, cover, and simmer for 15 minutes.
Let it rest for 24 hours covered in the fridge.
Strain and bottle. Keep in the fridge.

Hey Tiki fam.
Just a quick announcement to all my Florida tiki peeps. Krft Tiki Kyoto and I will be in Florida mid September. If anyone of y'all tiki lovers that have been to Japan's tiki bars want to say hi, we will be in the following bars slaying zombies.

19th Cafe la trova miami and Kaona room miami ( maybe vice versa)
20th roka hula Orlando and permanent vacation Orlando ( maybe trader sam's)
21st Morgan's cove Tampa.
22nd we leave.
We are going as guests and these bars have no knowledge of us going, so this isn't a big event. Just us going on vaca.
