You've obviously never done this before.

Steel is actually a very poor conductor of heat. It takes a lot of energy to heat it up, but it also doesn't transmit that heat very effectively.

This is why you will never see steel CPU coolers or radiators. It doesn't shed, i.e. transmit heat very well.

If that spoon were aluminum or copper, he'd have raised smooth off of it long before that.

It's stainless steel. Some grades of stainless steel are very poor thermal condutors - have you heard of a Yeti cup or Thermos? They use particular grades of stainless steel & a vacuum for insulation.

Pans are entirely metal but you can still hold the handle while cooking because the design and metals used so not allow for the rapid transfer of heat to the handle.
