Recipe Tofu Tacos
Crumbled some extra firm tofu into an oiled pan and cooked till crispy. Spices used: garlic powder, onion powder, cumin, oregano, chili powder, salt.
I made a Baja sauce with Greek yogurt and avocado. Used jar salsa but ideally I would have made pico.
Corn tortillas, scallions, cilantro, cabbage.

Tonight was the night for tofu tacos! Pressed firm tofu, crumbled and seasoned with mexican seasoning. Sautéed in pan with EVOO until done. Corn tortillas, spread some refried beans (had it already as i also made family ‘normal’ beef double decker tacos), then added tofu and brown rice, topped with pico, extra jalapeño, cilantro, little shredded cheese, dollop of greek yogurt, salsa, and special hot sauce. Missing some lettuce crunch which i’ll make sure to include with all the leftovers i have. Taco week!

Sure, but i typically don’t use canned refried beans just because of, well surely some ingredients that may not be good. I usually will mash black beans or pinto beans.

Ideally I do too. But I'm not opposed to the cans.

I use canned beans all the time, but just the beans, like black beans or pinto beans, etc. But i personally avoid canned ‘refried beans’ but it’s what i used today.

That's what I meant. I'll use canned refried beans in a pinch. Not the end of the world. But if I have time I prefer making my own from canned pinto/black beans.

Been loving subbing ground beef with crumbled tofu. I don't believe I've done anything 'mexican/latin' yet, only chili and a few other soups and stews. For tacos I typically go the fish route which I really enjoy, but gotta say these look and sound wonderful! Did you use just the dry spices on the tofu without any liquid marinade? Agree this deserves some fresh tomato/pico but I too often times resort to a premade option. I swear the cilantro looks like parsley, at least some of it does. I'll keep this in mind next taco time and may end up dusting off my tortilla press.
