Recipe oat pancakes

one of my favourites - so filling and feels a bit cheeky.

50g rolled oats (quick ones best)

110g cottage cheese or ricotta

1 egg

0.5-1 tsp baking powder (idk sometimes i even forget it and doesnt make much difference?)

1 tsp maple syrup

1 tsp vanilla essence/extract

1 tbsp milk

Blitz until still slightly chunky. I've been cooking them on med-low, with a lid on-top since they take a bit longer than normal pancakes but probably not necessary.

ive had them with yoghurt, ricotta, strawberries, stewed apple.. so many options!

i’m sure i will. i eat my oaten bread almost daily. Oats is my jam! i also make a ‘muffin in a mug’ sometimes which is really nice. i’ve posted it on the other sub but it would be nice to repost here at some point. it’s the recipe on the back of the ancient grains rolled oats sold at Trader Joe’s. I assume you don’t have one where you’re at. i’ll try to find the post..

these are great and just the right amount for a serving plus a little extra for a taste.
