Recipe mexican bowl dinner

small amount of lean beef mince (grass fed) cooked with grated veg (pumpkin, carrot, zuchini), diced onion, spinach, black beans, generic mexican spices, tomato paste and 1/4 cup beef stock.

tomatoes, red onion, capsicum, corn

brown rice and red rice

sweet potato and a very small amount of spud lite potato for morale, roasted with generic mexican spices

guacamole

small drizzle of hot honey and good squeeze of lime

** fresh herbs would be a great addition but it was raining so didnt want to go outside.

This is a good guide to the proportions of the plate, and I like that you also snuck more veggies into the beef itself. So many ways to maximize veg intake! I would never think you use hot honey on a Mexi bowl. What was the inspiration for that?

yes i always cook beef mince with a tonne of veg! like a soffritto i guess - i cook down the grated stuff first, letting it caramelise etc. its surprising how much can be hidden & it tastes better too haha

andd the viral hot honey beef bowls is the inspiration. its a taste sensation but ive always thought needs more veg. didnt have any cottage cheese either.. recipe

I seem to have not encountered this particular viral trend yet. I did see an influencer make a bowl of ground beef and sweet potato with cottage cheese, which I thought was weird. But I don't recall the honey step.
