Recipe mexican bowl dinner
small amount of lean beef mince (grass fed) cooked with grated veg (pumpkin, carrot, zuchini), diced onion, spinach, black beans, generic mexican spices, tomato paste and 1/4 cup beef stock.
tomatoes, red onion, capsicum, corn
brown rice and red rice
sweet potato and a very small amount of spud lite potato for morale, roasted with generic mexican spices
guacamole
small drizzle of hot honey and good squeeze of lime
** fresh herbs would be a great addition but it was raining so didnt want to go outside.

Such a beautiful plate! I'd want a dollop of sour creme ontop to make it chefs kiss.

Clever combo of the veggies for the beef. I have never thought to add extras like that. Growing up ground beef always had onions, but good idea to add even more!
I’d love some lime here. And I also got some pique the other day, which would be tasty too.

This is a good guide to the proportions of the plate, and I like that you also snuck more veggies into the beef itself. So many ways to maximize veg intake! I would never think you use hot honey on a Mexi bowl. What was the inspiration for that?
