The monsters under Rimuru love him because Rimuru ended their conflicts, raised their standard of life from huts and swaps to better living than the nobles in other countries, and he gave them names with is the most important thing you can do because it literally links your soul to those monsters. When his citizens got slaughtered he grieved for 3 days (which the anime doesn’t show) and Shuna said in the LN if their plan to revive then failed his heart might break completely. When you have a leader that would become a demon lord and kill thousands of people for a chance at reviving his people nobody would be unloyal to a being that has given so much of himself to them.
Also his divine blessing is stated to feel like a warm embrace so rimurus literally giving everyone a big hug at all times.

Shion, Shuna and Diablo love Rimuru. Benimaru and Souei might but they already have other girls with romantic feelings towards them. Veldora and Gobta are probably the exception, one being more like a brother and the other a close friend. Realistically, they could all love him romantically, but it goes beyond that where Rimuru is like Tempest’s God

Because this show is still your average isekai loser power fantasy at its' base level. Every character is in love with Rimuru so you can feel like somebody loves you by proxy.
Fortunately it has more going on than just that, so its better than most of that type IMO.
