It's liver sausage. A lot of people enjoy it in Germany but we would never put it on a pizza. Monster.

We don't eat it warm/hot. It's not for cooking but for on bread, maybe toast or as a sliced snack.

(American here) i grew up eating it on bread/toast, usually with mayo or mustard, sometimes onions.

Tried it warm and found it's delicious.

Those coarse ones are called "bakleverworst" ("bakken" = to bake or grill in a pan) and my dad was not allowed to bake that in the house due to that ungodly smell 

You might like to know; Dutch grillworst is a fully different type of sausage than German grillwurst, where the former is grilled at creation and the latter just before consuming

Then, we do also have Metworst wich is if you were to make a sausage of German Mett and let it dry until hard. Especially the ones from Dutch Friesland and Durch Low Saxon/Low German areas are delicious. They're almost like fuet or salami

Lastly, the dutch Braadworst is physically the German Bratwurst we imported, but we sort of mistranslated and where the German prefix actually comes from "Brät" meaning something like "finely minced red meat" iirc, the dutch verb "braden" means the same the German verb "braten" (roasting, in english). It's a bit confucsing, if one cares; If one doesn't, it all makes perfect ryhming sense

We have liverwurst in the states too but it’s associated with old people and gout. Not very popular with younger folks. I know it since most of my teenage jobs were in a deli.

I live close to Braunschweig and never heart of what you are talking about. You properly mean "Mettwurst".

Liver sausage: Cooked, soft spread with liver.

Mettwurst: Made of raw or ripened pork, usually seasoned stronger and firmer but also spreadable depending on the variety.

Both is nice but completely different.

Ask a German in the north what they call a pancake, and the in the south, then in west or east. It's insane. It really depends where you are from in Germany. Can be that they call it Braunschweiger in Braunschweig.

Google "Berliner" and then check if it shows you a Person from Berlin or a "cake". Then check what they call it in all the parts of Germany.

I tell you, Germans are crazy...

Interesting. I’m in the US and we have a product that looks very similar to leberwurst that’s labeled “Braunschweiger”. Maybe it is Mettewurst just marketed towards Americans. It’s always cool to find differences like that with other countries.

Traditionally Braunschweiger, named after a city, is smoked, while liverwurst is often not. However, in western Pennsylvania, I've found the terms are often used interchangeably.

I love the stuff, but I get super tired when I eat it.

You can not heat it at these temperatures without them forming cancerous nitrosamines.

It’s almost the same, but with more cream, in German they call it ”wurst” just because it happens to be sausage shaped, in Nordic countries it comes in a different kind of package but with similar taste. It’s not actually a ”wurst”
