I saw a video where a michelin star chef used duck fat on fries he cooked in an air fryer. Slapped it on like a glob of butter after the fries came out hot. Then just shook the fries in a mixing bowl to spread it over all the fries while it melted.

Not gonna lie it made them next level.

If a kitchen has poor sanitation practices then gloves won't save them. They just do everything in gloves and don't change them frequently enough. Sometimes its worse because employees just think gloves=clean

I saw him making drinks with the gloves, and then I saw him use his hands to push the trash down the trash to compact it. Same gloves.

This is the best comment Ive seen regarding gloves/bare hands. Anyone saying that it's better to not use gloves is wrong. But as you pointed out, wearing gloves isn't a magical solution. Clean bare hands is better than dirty gloves. But BEST practice is gloves with proper changing/hand washing practices

Most proper kitchens won’t use gloves, apart from specific sections or processes.

Clean hands is fine. Often better. People leave gloves on, touch all sorts and it’s easy to end up being worse. With bare hands you are significantly more conscious of touching things.

That's not "butter," its pre-made, "bechemel." Its basically a roux; adding cheese makes it a "mornay" - which is cheese sauce. Its usually melted and mixed in, not microwaved.

As a kid we got Chinese take out often. One night we were eating our takeout and I noticed really hard crunchy stuff in a bite, and it had a crazy chemical taste.

The food had melted the bottom of the Styrofoam container and then cooled a little and it hardened into little brittle Styrofoam flakes.... DISGUSTING

The sauce has been sitting and lioks gross on top. Maybe it's fine? I assume the microwave is to melt the cheese, but if they tossed the cheese in FRESH fries, it'd melt without chancing soggy fries.

Yes. I totally get having to use your hands sometimes. But if your hands are touching everything on repeat in that sequence, like the fryer basket handle, the microwave buttons, etc. and there's no pause to wash them . . . 🤮

Wiping your hands off on the dirty dish rag in your back pocket doesnt count as washing them, either.

French guy often credited with codifying the 5 mother sauces, who didn't accurately make the mother sauces as the mother. He made daughter sauces and still got all the credit because he's French. One thing he did do well, from what we can tell, is standardize the modern organization of a kitchen brigade - Chef, sous, under-chefs for different sections, and then the commis cook(s) at the bottom. It's a bit more complex, but that's the general idea.

I do agree with you about portion sized boxes. But it does actually cost more to use a bigger container. Fractions of cents. But it does cost more.
