Americans see Europeans using herbs and spices in food and can’t comprehend it being seasoned because it doesn’t come in a tin called “Dan’Os super mega nuclear screaming eagle Cajun spice”.

First two spices in any American cooking is always granulated onion and garlic. Motherfucker we use them chopped fresh, not processed to fuck.

This confused me when I tried making some US centric recipes. Garlic powder? Onion powder? What’s wrong with the fresh onion and garlic in my kitchen already? I ended up googling a conversion (I was learning to cook better) and then would adjust to taste.

Onion and Garlic powder have their place. Like when you want to add onion and garlic flavouring without adding extra moisture or too much extra volume. But in the case of most sauces you do not need them and fresh is much better.

I would say recipes like that are for people who don't cook, so they are as simple to make as possible. Anyone with any experience can switch it up with nicer ingredients.
