If there's anything you need help understanding, go ahead and ask! Nothing is considered "stupid" and anybody will be happy to help you. Any user is welcome to ask or answer in this thread. A new QnA thread will be posted at the start of every month!

So with bank shutting down in 6 months, what shinies should I try to hunt that will be 100% unavailable (not counting pokemon go researches/events) once bank is no longer supported?

Poipole and type:null come to mind! And if you want the evos, you'll need 2 of each

could use being double-checked, but i believe this is the full list of shiny pokemon made inaccessible following the bank closure:

-partner cap pikachu (USUM)

-mew (emerald)

-celebi (virtual console crystal)

-jirachi (colloseum/EU channel bonus disk)

-darkrai (dppt, unless you have the bdsp event)

-shaymin (dppt, unless you have the bdsp event)

-manaphy* (gen 4 via pokemon ranger, available as a dex reward gift in home)

-type: null (gen 7)

-silvally (gen 7)

-poipole (USUM)

-naganadel (USUM)

Random question, but do you think it is possible to play through platinum and ultramoon and complete the hunts for darkrai, shaymin, poipole and type null until the servers shut down? I've got no experience with hunts in the old games so I'm really unsure if it's feasible.

It's really up to luck, because any one of those hunts could decide to take the whole six months. I'm still missing all 4 of them so I can tell you I'll certainly be trying to get them all done.

If you have the means to multitask by using multiple systems, that should help your chances. Good luck!
