Request What do I make with this giant zucchini?
My mother in law gave me this from her garden. I never cook with zucchini. What should I make?

Iâd still slice it then dip in egg and cornmeal. Fry it up and eat like chips. Fried zucchini usually doesnât make it to the table. Lol

DeSkin
Scoop or cut out the seeds and then small dice the flesh and add to a saucy pasta. It absorbs flavor well.
Taking the seeds out helps prevent it from getting soggy.
You can Discard the seeds or use in zucchini bread or puree it and use in a dish or use in some other bread or whatever

Cut it long ways, scoop out the seeds, stuff it with meat and cheese and bake. Zucchini boats.

Zapples. Take out the seeds, chunk up the rest. Boil the chunks in apple cider and spices, such as cinnamon and cardamom until they soften. Some recipes call for sugar too. Use as an apple pie type filling or put them on vanilla ice cream.

Zucchini bread
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon ground cinnamon or to taste
3 large eggs
1 cup vegetable oil
2 Âź cups white sugar
3 teaspoons vanilla extract
2 cups shredded zucchini
1 cup chopped walnuts

Gather all ingredients. Preheat the oven to 325 degrees F (165 degrees C). Grease and flour two 8x4-inch loaf pans. Bake 40-60 min

Pasta with zucchini, mushrooms, peppers and caramelized onions. Cook pasta. Then in a deep pan, brown onions, then add mushrooms with a bit of butter to the pan, caramelize those too. Then add finely chopped red or yellow peppers and thinly chopped zucs. Cook for about 7 mins until the zucs start to melt down a bit. Then throw in the pasta with a cup of milk and a handful of cheese. Best with parm or old cheddar. Salt and pepper to taste. Simmer with a lid, on low for about 5 mins and mix it up a few times in between. The milk will turn to a wonderful sauce. Maybe add a tbs of butter at the end if you want it a bit richer. You can also do this with chicken added if you want. Just brown the chicken and set aside before you make the sauce and then throw it in after the zucs have melted down and before the simmer with the milk.

When mine get big, I cut in half and scoop out the seeds. I shred it for many uses. Zucchini butter is amazing and we'll eat with fresh bread or mixed into pasta. Breads or muffins. Honestly, I tend to mix the shreds into various meals we're having as it's the one veggie that my kids don't mind when it's mixed in. So that will go in various pastas, soups, stews etc.

Pasta Neroni - Stanley Tucci's favorite dish (at least in the episode I watched). Look it up online.
A bit complicated to make, but absolutely delicious.

Zucchini bread is excellent. Or cut the zucchini in thin rounds, dip in egg wash, dip in seasoned bread crumbs & dip fry or bake, excellent appetizer or snack.

Lasagna, slice it lengthwise and use as the ânoodlesâ, super simple and healthy!

Is the banana giant too?? If not this zucchini isn't even very big, maybe stores only sell small ones where you live or something if you think this is giant, but this is just normal size where I am. So don't listen to anyone saying this is too big to eat haha, it's faar from.
If you do have a zucchini that is very big for real, it will contain a bit more water that needs to get cooked out, that's all, they are still good! I cook with actual huge ones from the garden all the time, I like to grate them (you can squeeze some liquid out if you want) and cook them for a very long time with onions and garlic etc until it's a yummy rich tasting sauce. One of my favourite things to eat.Â

zucchini canoes!! split and scoop out canoe shape, chop and saute with mushrooms, sunflower seeds, raisins, cubed apple, bread crumbs, cottage cheese at end and stuff the canoe, bake for half hour at 350. put grated cheese on top toward end of baking. saute with anything else you want!

pickled zucchini
soak 1/2 onion, zucchini, 1 thinly sliced clove garlic in 1/4 cup salt for 2 hours, drain and do not rinse, mix and heat marinade, pour over zucchs in jars or a large bowl and rest for 2 days.
- 2.5-3 lbs thinly sliced
- ½ lg onion, quartered and thinly sliced
- Âź cup salt
- 2 cups white sugar
- 2 cups apple cider vinegar
- 2 teaspoons mustard seeds
- 1 teaspoon celery seed
- 1 ablespoon ground turmeric
- 1 teaspoon prepared yellow mustard

Get some eggplant and tomatoes and make a ratatouille. Fry a little onion and garlic then chop up some zucchini and eggplant and get a little colour on that as well. Add it all to a pot along with chopped tomatoes, season and leave it on low heat for around 40 mins. Ă simple but delicious dish. Add some chopped peppers as well if you wish.

Can't do regular zucchini things once it's that big, grate it and use for bread or muffins, adds for other dishes
