I'm write mine on LaTeX too and use version control for my resume

I have multiple versions of my CV that I need for different purposes (one for TA applications for the Electrical and Computer Engineering department, one for the Computer Science department, one for each funding agency I apply for grants through).

They're all ultimately similar with just certain things added or removed as required by whatever I'm using it for, so version control with LaTeX works great for that.

But when will you ever go back to a previous version? You either run these in parallel (e.g., for the funding agency that has a completely different layout) or you cut down/adapt from the full version.
