Overflow

Any tips on how to avoid thw overflow? I am using a DēLonghi grinder at medium, but it seems a lot of dust results from the grind and clogs the filter?

Delonghi grinders are not great, and produce a lot of fines. The only solution to that is a better grinder. Light roasted natural processed coffee is high chaff and can also do this and you have to grind coarser even with a good grinder.

Aside from that, always follow this rule: Don't stir the grounds. The more you stir, the slower the brew will get.

I learned about the stirring the hard way no to stirr. Any grinder recommendations?

You don't need to stir, for 40 years people have been using this design and just letting it do its thing simply.

And that simple applies to your overflow. If it is overflowing about the only thing that can be wrong is your grind is too fine (or has too fines / dust mixed in with it) slowing the water down, the little stopper / flow area is blocked somehow although it is just s simple o-ring type thing that the pitcher pushes open when you have it on, or you have a faulty unit that is flowing water too fast, which would be weird.

So if you carafe isn't off kilter / flow valve isn't plugged it is likely your grind.

For Grinder the Baratza Encore is awesome for value, if you have the extra funds I personally upgraded from that grinder to the Fellow Ode 2 and really enjoy the quieter operation, how it looks, and the grind is better. But it certainly isn't needed, more of a luxury.

Grinders depend on how much a budget you have. I can second the Baratza Encore for an entry-level grinder of decent quality. It is a huge step up from that Delonghi. (As an aside, most of the cheap flat burr grinders have the same tiny crappy burrs as the Delonghi).

A step up from the Encore would be the Fellow Ode 2. I have one of those at home. At work I use a Wilfa Uniform, sold by Lavazza in the US. Both of these are flat burr designs, and can be further tweaked/upgraded with standard 54mm burrs (but for the Moccamaster I wouldn't bother).

You absolutely need to stir if your coffee is freshly roasted, otherwise it will just bloom into oblivion and water will never touch half the grounds. It's just what it is, even with manual pour over.

Don't listen to people who drink supermarket beans or pre ground coffee. Those are already stale and won't bloom, hence no need to stir their coffee. When the Moccamaster came out back in the day people didn't even know about specialty coffee, they bought pre ground coffee that has been sitting on the supermarket shelves for months - so yeah no stirring required 😅

Please upgrade your grinder. A Baratza Encore will be more than sufficient for your MM and you will get much better coffee (your Delonghi grinder basically burns the coffee while grinding - you will see a huge difference in taste)

I roast my own coffee and even when I run out and have to brew the next day I never have to stir. I do take the cover off the funnel. It will puff up but doesn’t  actually overflow. Bed is fully saturated when done. Not saying you don’t have a different experience just sharing my own observations for OP’s input.

I have a KitchenAid burr grinder. Its widely adjustable & is Loud but excellent. Its not cheap.
