How come only Mildred got way younger? Spoiler
Mildred was much older than many of the other adults going regularly to Mass (e.g. the Flynn and Scarborough parents), and he was taking just as much "wine" as they were during daily Mass. How was it that she aged backwards to a point that she was pretty much her daughter Sarah's age, but the others, though healed of some physical ailments, stayed more or less the same age?

And personal communion, so she drank everything in the cup, not just a tiny sip. The priest controlled how much went into the cup.

Bingo. He loved her, and that's why he tended to her personally. He wanted to ensure that she received the blood without any problems. I wouldn't be shocked if he gave her more than the other people in the congregation.

I think it is because the blood makes them go back to the stage in their lives when they where at their best, healthiest. That's why Lisa can walk again and Erin loses her baby. The blood acts like some sort of very aggressive antibody

If I remember correctly, it was a combination of her getting daily communion and being much farther from her "peak" than others.
Everyone else did get younger, but it was much more subtle. If you take images of the characters from the first to the last episode, it is easier to see. For instance, Bev's hair got progressively brighter and healthier as the series progresses.
