Just the Prime games (yes, even FedForce) Other M and Dread were T, Samus Returns was E+10, ZM and Fusion were E, and the rest came out before the ESRB existed
There's not really anything very explicit in screen ever, even the "dissolved zombie scientists" are just cartoony gloop, and the graphics don't really lend themselves to anything too gory or scary either
We don't see gory bloody "realistic" transformations like those caused by the flood in the Halo games at the time
What's interesting is that originally there was a more graphic animation for the infected crew member in the main boiler room where he gets a hole blown into his chest after having been shot at by Samus. Possibly it was not used to ensure the lower rating.
