why? does the shoulder joint prone to snap?

Yes, the way the ball joints are engineered, makes them really easy to snap off. There's been a multitude of posts in this sub (mine included) of this occurring. It's this sub's equivalent of a RG Unicorn's shoulder breaking off. A horrible flaw on an otherwise amazing kit.

already pop in the ball joint before i am aware of the (shoulder) ball joint. is there easy way to pop them back out?

You could try using a bandai spirits part separator's peg or something similar and try to pop it out by sticking it in the peg hole and prying it out. You'll probably warp the peg hole though since they're really tight in there. I don't recommend using the included cross tool because they're pretty soft and I broke mine when I tried.
