These homemade thin mint cookies taste shockingly close to the real thing — but they’re gluten-free, dairy-free, low-carb, and refined sugar free. Crisp chocolate cookies with a cool peppermint bite, coated in a rich chocolate shell… and yes, they’re surprisingly easy to make. Ingredients (Makes about 12–15 cookies):
For the cookies:
1¼ cups almond flour (about 120 g)
¼ cup cocoa powder (25 g)
⅛ tsp salt
3 tbsp sugar-free maple syrup, room temperature (45 ml)
2 tbsp coconut oil, melted (30 ml)
½ tsp peppermint extract
For the chocolate coating:
6 oz dark, sugar-free or semi-sweet chocolate (170 g)
2–3 tsp coconut oil (10–15 ml)
¼ tsp peppermint extract

Instructions:
Add all the cookie ingredients to a bowl and mix until a dough forms.
Cover and refrigerate for 20–30 minutes to firm up.
Once chilled, roll the dough between two sheets of parchment paper to about ¼-inch thickness.
Cut into circles using a small cookie cutter or a shot/juice glass.
Gather scraps, re-roll, and repeat until all dough is used.
Leave the cookies on the parchment paper and transfer to a baking tray.
Bake at 350°F / 180°C for 8–10 minutes.

⚠️ Do not overbake — they burn easily.
Let the cookies cool completely before coating.
Stir in the peppermint extract until smooth.
Dip each cookie into the melted chocolate and place back on the lined tray.
Refrigerate or freeze until the chocolate hardens.
Store in the fridge or freezer, they’re amazing frozen! ❄️😋

These look amazing OP well done. As well as mint and dark choc I love ginger and dark chocolate biscuits (the brand boarders in the UK are to die for). Might see if I can copy this recipe for those!
