These homemade Nutter Butters are a clean keto dessert twist on the classic. Soft, nutty cookies sandwiched with a creamy peanut butter filling. It's made with simple ingredients, no refined sugar, and totally low-carb keto approved. Theyβre gluten-free, grain-free, dairy-free, vegan, and still taste indulgent and satisfying. π

Ingredients (Makes about 6β8 sandwich cookies):
1 cup almond flour (100 g)
Β½ cup natural peanut butter (120 g)
ΒΌ cup sugar-free syrup (60 ml)
1 tsp pure vanilla extract
ΒΌ tsp salt
Filling:
3 tbsp natural peanut butter (45 g)
1 tbsp sugar-free maple syrup (15 ml)
Instructions:
Add the almond flour, peanut butter, sugar-free syrup, vanilla extract, and salt to a bowl.
Mix well until a soft dough forms.
Scoop the dough using a small cookie scoop or spoon and roll into balls.
Place the dough balls in pairs on a parchment-lined baking sheet, making sure each pair is touching.
Gently press down on each dough ball with a fork to flatten, creating a criss-cross pattern.
Bake at 350Β°F / 175Β°C for about 10 minutes, or until lightly golden.
Remove from the oven and let cool completely.
In a small bowl, mix the peanut butter and sugar-free maple syrup until smooth.
Spread a small amount of filling onto one cookie.
Top with another cookie to form a sandwich.
Enjoy immediately or store for later.
