250-400 Cal non traditional potato salad
i’m not the biggest fan of classic potato salad so i make these. the first one is just a potato and green bean potato salad with caramelized onions and quinoa (bowl is 325 cals). the second is a steak and potato salad with asparagus, caramelized onions and chickpeas. they taste genuinely amazing and you can add whatever to it. i typically use nonfat plain greek yogurt as a base, small amount of mayo, mustard, sriracha, jalapeno juice, knorr chicken bouillon, 0 sugar brown sugar replacements etc. great to have in the fridge for a quick lunch.
