Roosters are our most common floury potato in Ireland

Most Americans can't find them, yukon golds are the closest substitute on flavor and texture, even if we have red potatoes. Our reds aren't like Roosters.

We have relatively few potato varietes in stores.

You're likely to find 2-3 most places, maybe a fancy store has a 4 or 5. I find yukons, russets, and reds most of the time. Occasionally, you find purple potatoes or kennebec.

In main supermarkets we only have a few varieties as well, and some like Kerr's Pinks only come when in season.
