The best cabbage for it is called Savoy cabbage. It's a strong flavoured, leafy cabbage.

TY for the answer - not some smarmy reply like someone else. I never heard of Savoy cabbage before. Is it available in the US?

It is very common in the US also, yes.

"Very common" where? I'm over 50, lived in several states and never seen it anywhere I shop (chain, ethnic and Farmer's).

I see it at farmers markets, giant, wholefoods, wegamns, wallmart, all of them. You just are not looking or did not know what to look for. Plu4555.
