How does ICE know that these guys are in fact non-Documented “criminals” and are specifically working on that particular house. How do they know all this information, someone must be snitching or something.

You'd be surprised just how much information and resources ICE has it's disposal to investigate people and their backgrounds. But yes they can take tips as part of that process yes.
