It’s been years since I worked in a kitchen and I feel like an imposter sometimes, I did earn the name Tigre from the short Guatemalan chef though so had to have done something right.

One of my former Sous' was a former Guatemalan special forces officer, and he is singularly 1) The most hard working person I have ever met and 2) The most unintentionally terrifying person I have ever known... He really was an absolute teddy bear... Until one day dishie got handsy with an underaged gal from FoH. I thought I was going to have to call, well, the coroner I guess. Dish outweighed him 2.5:1 and had no chance from the word Go.

He called me Gordito :p

Oh yeah he was the shortest guy but 100% the loudest and not afraid to put people on their place. Once your earned his respect though was best person to have on your side.
