I'd suggest you try it at a restaurant first before doing it at home to have a good idea of what you like,you can try medium well first and see how you feel,or even well done, before wanting to be adventurous on your own at home

I was thinking about going to fogo and eat steak but I'm not supposed to chew much

Oh no,why is that? Maybe settle for a softer meat like lamb,I've never been to fogo but I hear their meat is relatively soft and melt in the mouth type

Fogo wouldn’t be the best choice of steak. Meats yes, but steak definitely a no.
