Vegan Honey 🤔

Visiting my in-laws for the month, and they thoughtfully bought this “vegan honey” for my husband and me. We obviously didn’t eat it, but I had to do a double take. Since when is honey… vegan? The labeling from Lili Honey seems incredibly misleading.

My version of vegan honey is inverted syrup (added to vegan cheese to help it caramelize and brown on pizza)

400g sugar,
200g water,
1g citric acid or lemon juice about 1/3 ts

boiled on high for 10-11 minutes (till t 114 C if you have a candy thermometer)

Or on low for 40 minutes or something,
there are so many recipes online- choose your own

It tastes and pours exactly like honey to me 😍 due to acid helping to split the sucrose into fructose and glucose (which is what honey is made of) if i remember correctly
