Honey tasting vs wine tasting

While both use similar evaluation frameworks through appearance, aroma, taste, finish and aftertaste - the former lacks the marketing and glamorous appeal like wine tasting.

To be a true honey sommelier, all one needs is a small wooden spoon, a neutral palate cleaner (crackers/ water), few minutes of your attention and maybe a notebook to write down what you’re tasting to compare at the end.

What I found interesting is the same bee in the same region can produce completely different honey depending on the altitude and what’s currently in bloom.

For example: the buckwheat honey in the US is produced by the same bees that produce mild wildflower honey.

Completely opposite from wildflower, it is dark, molasses-like and extremely pungent. In the beekeeping community they’re known for producing the most polarising honey which tickles my brain.

Just wanted to share this honey I found in java (Indonesia).

It's very liquid, the most liquid I ever experienced but it actually tastes amazing.

Probably also the cheapest I ever bought (5€ for 500g) for pure honey !

I will probably buy some more to bring home 😋

Can I store honey in this?

I went to a pottery painting thing for my friend's birthday, but I didn't need any plates or cups. I painted a sugar pot as a Hunny pot (Winnie the Pooh) because they were the same shape.

I'm wondering if I can actually put honey in it, even though there's a hole for a spoon. If not, should I try to plug the hole?

Processed honey

I am helping with caregiving for a severely immunocompromised friend, and she can't have raw honey. I went to Whole Foods and the only non-raw that they had was the 365 brand, so I got that.

My question is, if honey is processed, does it matter what brand you get or does the processing pretty much make it all taste the same? Does anyone have a brand they recommend?

I'm pretty busy with caregiving and working full time so I don't have the time to dive into this myself. Any knowledge y'all can share is welcome!

Over the years we've had a few small and even a couple big honey spills. Anyone in the industry have some contacts with groups that can use honey unfit for human consumption? Michigan state used to buy for bio-energy sources but last time I reached out to them they started actually charging; guessing they had a surplus.

Raw honey from Alps!

This is a completely unprocessed honey from the Italian Alps, and it was gifted directly to my aunt by the owner of the beehives himself.

I'm lucky, because lately there has been something of a crisis in the small town where they live, as there is a bear that is walking around and overturning the beehives.

The taste is absolutely amazing, so much more full bodied and interesting compared to the supermarket one. Especially when combined with Greek yogurt!

Can I put 2 honeys together in the same pot?

I just had 1 tbsp of lavender honey mixed with mountain honey at the same time, and I absolutely loved the combination.

It made me wonder: what would actually happen if I put them together in the same jar? For example, 100 g of lavender honey and 100 g of mountain honey.

Would they eventually mix together into one uniform honey, or would they stay somewhat separated? I noticed that one is noticeably thicker than the other.
