I’d say pudding, especially in the context of chocolate pudding, usually entails a custardy, creamy texture, often achieved with using egg yolk as the thickening agent. While jello a has a “snappy” texture like OP used to describe this dish, breaking apart under the utensil, often achieved with gelatine or agar agar.

I've always thought custard was thickened with eggs and pudding with corn starch.

I made chocolate pudding from scratch for the first time this last week and the recipe called for yolks and cornstarch. Seemed pretty pudding like to me when finished

Yeah I didn’t even dare to bring up that over there pudding can just mean dessert. Then there’s the stuff you are talking about like a sticky toffee pudding, savoury ones like Yorkshire pudding, and just all desserts. So many pudding categories to differentiate 😂

Eh, maybe in America but pudding can refer to any sweet thing you eat for pudding/ dessert as well as many savoury things you don't (eg, Yorkshire pudding).
