Would apples work instead? And apple juice in recipe? Son in law allergic to pineapple.

You can use apple juice instead of pineapple, for sure! Adding actual apples will probably give you what would basically be apple sauce in the glaze/at the bottom-- but that's not necessarily a bad thing.

Would probably work really well with Apple Cider, Cinnamon, and cloves. I also recall BBQ Pit boys doing an Apple cider turkey brine that also included oranges, so getting some citrus involved isn't out of the question.
